Remember the other day I used pepper for the roasted pepper pasta? Well I got half of those peppers left in my fridge and a big stem of ginger left from a few days ago.
So my inspiration came from the ginger: why not make a sauce/glaze to go with the rice and pepper?
Immediately,
I had a vision: ginger honey and orange glaze with roasted chicken legs and serve it with rice!
My boyfriend was so thrilled because he absolutely love ginger!
To make the sauce, it was rather complicated but I love the process of it. I used a lot of pressed ginger juice and ginger mash, along with my organic honey, a bit of grape jam for the texture, orange juice and water.
I pan fried the chicken first to get the nice browness and continue the cooking process in the oven so the meat will be soft and tender while the skin will become more crispy. Peppers were also roasted with the chicken so it absorbs the chicken oil and get an extra level of flavor.
The outcome?? I could not stop eating it! I wish I cooked a little more to be honest :D
