Every time I go grocery shopping, I always plan and write a shopping list before hand. That list, not only save my life on numerous occasions
(having forgotten something and then going back to the market again), it also helps me not get distracted by snacks and junk food. But sometimes, unlike me, my partner would shop randomly and then end up with a lot of random food in the fridge I also think that that is his attempt to make me complete a Top-chef challenge. So here today, we got ginger, garlic, chili , eggplant plus the minced pork he bought earlier. Last night, I decided to go a little more Chinese root with the dish.
Spicy minced pork and grilled eggplant in garlic and ginger gravy!
It was somehow a complicated dish considering that most restaurants would just stir-fry everything and viola! But for me, I like to build flavors in my cooking. So I first grilled the eggplants, squeeze fresh ginger juice, and mix with the mashed up ginger and garlic then fry them lightly with the chili.
After that I pan fry the minced pork and add chicken stock for it to bring to boil. with the extra 1/2 cup of chinese wine, the flavor comes out nicely together. This entire dish took about 1.5 hour to complete but oh my! I always say: Never go to a restaurant ever again :D Besides, It only has a tablespoon of olive oil so it makes the food healthier and tastes better.
